Xinghua Rice Vermicelli (Xinghua Pinghua character: bî-heông; Xinghua Chengcheng accent: pi˧ h-ɔŋ˦˥˧), made from rice and water, is a traditional speciality of Putian, Fujian. It is slightly yellow, fine as silk, and dry and storable.

It is a famous local speciality of Putian (known as Xinghua Army and Xinghua Prefecture in ancient times), and one of the earliest fast food in China (it takes only 30 seconds to cook in soup), which is inexpensive, famous both at home and abroad, and especially loved by overseas Chinese. The origin of the rice noodles is mainly in Xihong and Qingjiang villages in Huangshi Township, Putian City. The best rice noodles are made from top grade yellow tip rice, which is made through 9 procedures. The characteristics of authentic Xinghua rice vermicelli are: easy to break after a long time of cooking, as fine as 1mm, slightly yellow in colour, easy to cook and fry, convenient to eat and drink, and unique in a kind of flavour.
